Fish Stew Recipe

This fish stew is very simple to make and so yummy. It can be served with Fufu or cooked rice. I love to make it with red snapper or Tilapia but any fish can be used for this recipe..

Ingredients
  • 2 fresh fishes, I used red snapper
  • 3 fresh tomatoes, mashed
  • 2 tablespoons of tomato paste
  • 1 large onion, sliced
  • 4 shallots, finely sliced
  • 4 garlic gloves, chopped
  • A small piece of fresh ginger, grated
  • Chili pepper, to taste
  • 1 bouillon cube,
  • Black pepper
  • Potatoes,
  • Carrots
  • Cabbage
  • 150ml oil
  • Few spaghetti for thickening the stew, optional
Direction:

Step 1: Making the tomato Stew.
 In a pot, heat the oil and add the onions and shallots. Add some salt and stir-fry the onions for 2 minutes.
Add garlic and fresh ginger. Add in the tomatoes and tomato paste, add the bouillon cube and black pepper.
Allow to cook on low heat for 10 min.
Step 2: Adding the fish.
Note: To add the fish in the tomato sauce, you have two options:
1- You can choose to fry the fish first in hot oil then add in the tomato sauce
2- Or add the fresh fish directly in the tomato sauce without frying it.
So add the fish in the tomato sauce and cook for 2 minutes.
Step 3: Add  a liter of water and all the vegetables..  Add the spaghettis which is totally optional and the chili pepper to taste.
Salt to your taste and let simmer 20 to 25 minutes.
When the fish stew is ready, serve it with rice or fufu.
