Nyama na Irio Kikuyu
Ingredients (for 4 people)
- - 1.5 lb of beef (steak, for example)
- - 1 onion
- - 2 tablespoons of flour
- - 2 tablespoons of chili oil
- - 1/2 lb of mashed potatoes
- - 1/2 lb of peas
- - 1/3 lb of sweet corn
- - A knob of butter or margarine
- - Neutral vegetable oil
- - Salt and pepper
Preparation
- Peel and cut the potatoes into chunks. Cook in a large saucepan of salted water (cold start).
- Cook the peas in a large volume of boiling salted water (2 teaspoons of salt per quart of water). Proceed the same way for corn.
- Drain separately.
- When the potatoes are tender, drain and keep the cooking water.
- Mix together the potatoes and peas and add a little cooking water to loosen potatoes puree until desired consistency.
- Then add the knob of butter or margarine and mix well by incorporating the corn that must remain whole.
- Cut the meat into 1 inch strips.
- Sauté in hot oil until browned, then remove the meat and set aside.
- In the same skillet, sauté the finely chopped onion over medium heat. Add a little oil if the rest of cooking the meat is not enough. Add salt and pepper. Add the flour, mix well and immediately add 3-4 tablespoons of water, chili oil and mix again.
