Chopped Pear and Spinach Salad
- 3 bosc pears, diced small
- 1/2 cup cucumber, diced small, seeds discarded
- 3 scallions, snipped w/ kitchen scissors, white bulbs discarded
- 1/4 cup fresh tomatoes, diced small
- 3-4 cups baby spinach, chopped
- 2 cups romaine, chopped
- 1 cup cooked whole wheat couscous or quinoa
- 1/4 cup dried cranberries, finely chopped
- 1/4 cup feta or goat cheese, crumbled
- 1/4 cup sliced almonds
dressing:
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
- 1 tablespoon water
- 2 teaspoons dijon mustard
- sea salt and fresh black pepper, to taste
Instructions
- In a large bowl toss all the salad ingredients together except the almonds.
- Whisk the dressing ingredients together in a small bowl. Season with salt and pepper to taste.
- Add the dressing a little bit at a time and toss well. You may find that you don't need it all. Serve immediately with almonds scattered over top.
