Chopped Pear and Spinach Salad

Ingredients (3 servings)
  • 3 bosc pears, diced small
  • 1/2 cup cucumber, diced small, seeds discarded
  • 3 scallions, snipped w/ kitchen scissors, white bulbs discarded
  • 1/4 cup fresh tomatoes, diced small
  • 3-4 cups baby spinach, chopped
  • 2 cups romaine, chopped
  • 1 cup cooked whole wheat couscous or quinoa
  • 1/4 cup dried cranberries, finely chopped
  • 1/4 cup feta or goat cheese, crumbled
  • 1/4 cup sliced almonds 
dressing:
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • 1 tablespoon water
  • 2 teaspoons dijon mustard
  • sea salt and fresh black pepper, to taste
Instructions
  • In a large bowl toss all the salad ingredients together except the almonds.
  • Whisk the dressing ingredients together in a small bowl. Season with salt and pepper to taste.
  • Add the dressing a little bit at a time and toss well. You may find that you don't need it all. Serve immediately with almonds scattered over top.
